Whetstones with various personalities

Don't all whetstones look the same?
In fact, each type has different characteristics depending on the manufacturing method.
Additionally, the stands and cases that come with stones vary from manufacturer to manufacturer.
This time, we will talk about one of its characteristics, ``water absorption,'' so please use this as a reference when choosing a whetstone.
Knowing the characteristics of the whetstone is the first step to making sharp knives!

When sharpening, water is essential in order for the knife to glide smoothly on the whetstone.

However, depending on the manufacturing method, there are some whetstones that absorb water and others that do not.

〘Water-absorbent whetstone〙
The whetstone has small pores that allow water to enter and permeate the entire whetstone.
Advantages: Water penetrates into the whetstone, so you don't have to use too much water when sharpening your knife.
Disadvantages: Must be soaked in water before use. It takes time to dry after use.

〘Non-water absorbing whetstone〙
This whetstone has few pores and does not easily absorb water. Also, keeping it moist for a long time may cause the whetstone to crack.

Advantage: You can quickly sharpen your knife by pouring water on it. It dries quickly after use and is easy to store Disadvantages: You have to spray water frequently while sharpening.
Although whetstones may look the same at first glance, they have different characteristics.

If you search for "recommended whetstones" or go to a hardware store, you'll probably see a variety of whetstones, but I hope you remember this blog and wonder, "What kind of whetstone is this?" I'm happy.
